Bone broth seems to be all the rage today, very, very trendy.  Everyone from Oprah to Dr. Oz and the LA Lakers tout the healing properties of this delicious elixir.  However, the ancient doctors of China have known for thousands of years the incredible healing benefits that people can gain from this simple soup.

So, what is bone broth?

A broth is a soup that is made from boiling meat and vegetables in water slowly.  As the name suggests, bone broth is made with bones.  What’s Fresh Eatery’s Chef, Charleston, uses a combination of bones and a little bit of meat from chicken and grass-fed beef, both which have been raised free from antibiotics and hormones.  He combines bones with vegetables such as onions, garlic, carrots, celery, various spices and a few other secret ingredients, then simmers low and slow for over 24 hours.  We have two frozen preparations of bone broth available, the standard and FODMAP-friendly varieties.  What’s Fresh also serves a miso bone broth with sautéed greens and mushrooms.  It’s absolutely divine!

Why should I be drinking bone broth?

Nutritionally, bone broth is a champion for many reasons.  It is packed with vitamins, trace minerals, protein, collagen, glucosamine, chondroitin and keratin – all of which are easily absorbed by the body.  Bone broth also contributes to a more ethical consumption of meat.  It allows one to make use of the entire animal, reducing waste.

Researchers in Japan have discovered that the incorporation of bone broth into people’s meals contributed to a normalization of blood pressure.

Chicken contains an amino acid called cysteine, which can make mucus less sticky and easier to expel from the lungs.  Researchers at the University of Nebraska Medical Center have studied chicken soup’s ability to inhibit neutrophil mitigation, reducing the duration of infection.

Bone broth contains chondroitin sulphates, glucosamine and other compounds that are extracted from the boiled down cartilage.  Amino acids such as proline, glycine, and arginine all have anti-inflammatory effects.
